Besan K Laddu... Ganesh Chaturthi Special

Hii Friendz...

Today we will have two very yummy recipes. One sweet dish for nevadhya and One spicy for a change from sweet dishes. Lets start with besan k laddu , very easy to make and delicious to eat + Bappa also loves them a lot :) :) :)



Ingredients :

1). Besan/Gram Flour : 200gms ( You can also measure it with a cup )
2). Sugar (Powdered) : 200 gms ( Or same measurement cup as besan)
3). Ghee : 50-70 gms (actually it depends on the besan, it is thick or finely                                    grounded)
4). Dry Fruits : Mainly Kishmish + Kaju


Procedure :

1). Take a wok/pan , now add ghee in the pan and heat on medium heat.

2). Once the ghee is properly melted , add besan in it. Saute the besan till the colour changes.

3). The besan should be soaked in ghee partially , wait i will show it to you.



4). Saute the besan till it goes light brown in colour. It will change from yellow to light brown. Keep sauteing the besan till the shade is same all over.



5). Once it is done , remove the besan off heat.



6). When the besan has cooled to room temperature , add the sugar in it properly , by crushing all the lumps. And making a fine powder. (Jitna Besan uss se thodi kam chinni )


7). Add kishmish and kaju.


8). Now , roll out perfect round laddu's out of it. Once done , offer them 
to ganpati bappa...

Once nevdhya is done , offer the prashad to all... :) :) :)

Modak... Ganesh Chaturthi Special....

Hey ...

Today we will make Modak... Ganpati Bappa's Favorite.... Basically , Modak is of many different types , but here we will make a simple yet yummy version of it.



All your need is few ingredients but a bit of more time and patience than the other versions. So lets start with the recipe.

Ingredients :

For Cover
1). Atta : 200gms
2). Ghee : 3-4 Teaspoons
3). A pinch of Salt

Knead in a tight dough and keep it aside to set.

For Filling
1). Coconut : 1 Grated
2). Milk : 1Kg
3). Dry Fruits : 1 Tablespoon chopped
4). Sugar : 5-6 Tablespoons

Procedure :
(For Filling)

1). Take a kadhai , and put the milk in it on medium flame If you are away doing some other preps (Do not add entire milk in one go , add 2-3 cups at a time or else it will overflow) 

Tip : Use high only if you are standing there in front of the kadhai , keep using a spatula in the kadhai to get rid of the bubbles forming with a creamy layer.

2). Once the milk is has reduced by 1/4 or so , add grated coconut. Let the coconut boil with the milk.



3). Add the dry fruits in it while the milk is boiling with the coconut.

4). A point will come when the milk will start drying up in the Kadhai ,this is the perfect time to add sugar in the mixture.



5). Now , after adding sugar once again the mixture will dry up. At this time , remove the filling of heat.



6). You have both the filling and cover ready. Please let the filling cool for sometime , till that time divide the dough into 21 equal balls.

7). Roll out small circular puris out of the balls. Now put the filling in the middle of each small puri. Pinch the edges. Then join all of them (refer the image for help)


8). Once the procedure is repeated for all 21 Modaks.



Deep fry these modaks into ghee or oil as per your wish. While frying modak's you need to be careful that you don't distort the shape. Specially the pointed top.

9). Fry only 2-3 modaks at a time until crispy golden colour. When all 21 modak's are properly fried as directed. Offer them to Bappa as Navedhya and then serve the prashad... :) :) :)

Malai Pudi... Ganesh Chaturthi Special.....

Hey Amigos....

I really feel bad , that I promise you guyz for a recipe and vanish in between , but here in uganda , I face a lot of issue with the internet. Anyways , lets forget all that and move ahead. I know I promised you all to post Idly Sambhar and Chutney , but I have rescheduled the posts , on the occasion of Ganesh Chaturthi...

So ... Without wasting any more of the precious time , let us start off....




Ingredients :
For Pudi's
1). Milk : 500gms boiled and turned to 250gms
2). Maida : 3-4 Tablespoons (Depends on the consistency of batter)
3). Sugar : 3-4 spoons
4). Elaichi : 2 (powdered seeds)
5). Baking Soda : 1/4 Teaspoon
6). Dry fruits : 2 Tablespoons (Chopped)
7). Ghee to fry Pudi's

For Syrup 
1). Sugar : 1 and a half cup
2). Water : 1 cup 
3). Elaichi : 2-3
4). Food colour : Yellow ( 1/4 Teaspoon)

Procedure :

For Pudi's

1). Boil milk , until it remain only half , creamier and thicker. It takes only 20-25 mins when boiled on high flame (BUT CONSTANT STIRRING IS NEEDED , else Boil it on a slow flame).




2). Once you have got the milk in proper quantity , remove from heat.

3). Now , its time to add maida in the thick , creamy milk. You have to add slowly and keep mixing to avoid any lumps. Add maida , to make it a soft and smooth paste ( NOT TOO THICK ,  NOT TO RUNNING). 




4). After adding maida and whisking to form a soft paste , add sugar , soda and cardamom powder. Whisk more for smoother paste.

5). Heat Ghee in a pan , and slowly add the batter with the help of a spoon in the shape of a small round pudi.




6). Turn on the other side of pudi , slowly and only at the time when you see small bubbling holes in the pudi's at the corner of it.

7). Once done pinkish golden from both side , slowly bring them out , by draining , extra ghee with the help of spatula.

8). Add these pudi's to chashni/sugar syrup. Dip in for few minutes , and serve hot in plate , garnished with dry fruits.

For Sugar Syrup/Chasni

1).  Take sugar and water in a pan , boil it till sugar dissolves on high flame.

2). Add 1-2 spoons of milk , to remove dirt from the sugar , it helps to get a clear sugar syrup.

3). You can remove dirty brown bubbles from the top of the boiling syrup.




4). Add cardamom and food colour to the syrup , till you get 1 tar ki chasni.




Finally , when both the portions of the recipe are ready , dip the pudis in the syrup , garnish with dry fruits and serve :)



And Now , you can bring out the pudi's in a plate , garnish with dry fruits... and enjoy the tasty dish but first , serve it to ganesh ji , I mean ganesh ji ko bhog lagana mat bhulna :) :)

Veggie Cheese Balls....

Helllo Friendz....

Today you can check for hot cheese drippling , veggie balls... They taste good when served hot with ketchup and green chutney. It is easy to make , a delicious to eat. So lets start wid the recipe..




Ingredients :

1). Boiled Potato : 3-4
2). Spring Onions : 2 Stalks Chopped
3). Carrot :1 Small Chopped
4). Corn/Peas : 25-30 pods
5). Green Chillies : 2-3 Chopped
6). Bread Crumbs : 2-3 Tablespoons 
7). Cheese Cubes cut in pieces
8). Cornflour Paste with Black Pepper and Salt
9). Cumin seeds : 1 Teaspoon
10).Chilly Powder : 1 Teaspoon
11). Pepper Powder : 1 Teaspoon
12). Chaat Masala :2 Teaspoons
13). Soya Sauce : 2 Teaspoons
14). Tomato Sauce : 3 Teaspoons
15). Salt as per taste.
16). Oil

Procedure :

1). Take Oil in a pan/wok. Let it heat on medium flame , add cumin seeds. When Cumin seeds splutter , add spring onion and green chillies.

2). Saute for a minute. Add chopped carrots and peas/corns as per your wish.



3). Add soya sauce and tomato sauce along with salt , pepper , red chilly powder and chaat masala.


4). Saute and mix all the veggies properly , now add potato mash to the mixture and saute. Cover lid for 1-2 minutes.


5). Once the mixture is properly done , remove from heat and take out in a bowl. Let it cool a bit so that you can easily shape the balls.

  6). Take the mixture in hand , press it in between , place a cheese cube and   join the ends. Form a ball out of it. Repeat the procedure for all the others.


  7). Dip these balls in the cornflour+pepper+salt+water Paste. Now put these       wet balls in bread crumbs and then deep fry until golden.
   

  8). Serve hot wid Tomato Ketchup and Green Chutney.

Chinese Manchurian (Veg)

Hi Friendz...

Today you can check for the recipe of Chinese Manchurian (Veg) with a bit of Indian twist. Hope you like it. Prepare it , it will not take much of time and then relish it with you family. Tomorrow , you can check for Veggie Cheese Balls. Lets start with the recipe then.




Ingredients :
For Balls 
1). French Beans : 10-15 (Finely Chopped)
2). Carrot : 1 Medium (Grated)
3). Spring Onions : 3-4 (Finely Chopped)
4). Green Bell Pepper(Capsicum) : 1 Small (Finely Chopped)
5). Ginger : 2 Inch (Grated)
6). Garlic : 3-4 Cloves (Finely Chopped)
7). Green Chillies : 4-5 (Finely Chopped)
8). Maida : 2 Tablespoons
9), Cornflour : 3 Tablespoons
10). Black Pepper Powder : 1 Teaspoon
11). Salt to Taste
12). Oil to deep fry balls




For Gravy :
1). French Beans : 2-3 (Finely Chopped)
2). Tomato : 1 Medium (Finely Chopped)
3). Spring Onions : 3-4 (Finely Chopped)
4). Green Bell Pepper(Capsicum) : 1 Small (Finely Chopped)
5). Onion : 1 Small  (Finely Chopped)
6)  Ginger : 1 Inch (Grated)
7). Garlic : 2-3 Cloves (Finely Chopped)
8). Green Chillies : 3-4 (Finely Chopped)
9). Vinegar : 1 Teaspoon
10). Cornflour in 1 cup water : 3 Teaspoons
11). Tomato sauce : 2 Teaspoons
12). Chilly Sauce : 1 Teaspoon
13). Soya Sauce : 2 Teaspoons
14). Azinomoto/MSG : 1/2 Teaspoon ( NOT COMPULSARY,  SKIP IF You WANT)
15). Sugar : 1/2 Teaspoon
16). Black/white Pepper Powder : 1/2 Teaspoon
17). Salt to Taste
18). Oil
19). Vegetable Stalk /water




Procedure : (For Gravy+Balls side by side)

1). At first , Take all the components of the manchurian ball in a plate and leave them for 10 mins. So that all the veggies can leave the moisture and water.




2). Till that time , lets prepare the gravy. Take oil wok/kadhai. Once heated on medium flame , add ginger and garlic one after the other.  Saute for a few minutes and add onion in it.




3). Add some salt , saute for a minute and then add bell peppers , spring onions , beans and chillies. 

4). By this time the veggies have turned soft , so add tomato and saute for few minutes on slightly high flame.You can also put another pan with oil on medium flame for deep frying the balls.



5). Now it is time to add all the three sauce in the ingredient list.



6). After proper mixing and wrapping of sauces on the veggies , add vegetable stalk/water and bring it to boil for 2 minutes on high flame. 





7). Utilise these 2 minutes for mixing all the ingredients of balls properly. and try to shape them in small balls with the help of your hand. ( I am sure , in these 10 minutes the mixture is moist and would not need additional water). Now , its perfect time to add sugar , MSG , salt to the boiling gravy.



8). By this time , your oil is perfectly heated for deep frying balls , shape 3-4 , fry them. Till the time these turn golden brown , shape all the others.




8). After this , you can add the cornflour+water paste in the gravy. When the gravy is turning thicker in consistency add the vinegar.



9). Your gravy will turn little dark in colour and thick in consistency. 



10). Balls will look like this , golden and round and yummmyy...


11). Once both gravy and balls are prepared , you can serve hot by garnishing it with chopped spring onion wid fried rice or even plain rice.

Pakode Wali Kadhi....

Hey Amigos....

Today I am sharing the recipe of kadhi wid pakoda... I know it is a common recipe , and almost everyone makes it.. but do try it this way... I am sure you will  realllyy love it this way... I will also tell you all about few variations in this... 

So let us start with the recipe... and tomorrow be ready to prepare Chinese Manchurian.. (Veg) .. I am really sorry for not posting any non-veg recipes but friendz , I am in africa .. and you all must be knowing about the Ebola virus.. So no non-veg.. Not even Eggs :(

Anyways... There are plenty of veg recipes we can relish happily :) :) :)



Ingredients :
(For Kadhi )
1).Curd :  500gms (or Buttermilk 1 ltr)
2).Besan : 2-3 Tablespoons (According to the thickness you like)
3).Hing : 1/4 Teaspoon



4).Onion : 1 (Big Finely chopped )
5).Garlic : 3-4 Cloves ( Finely Chopped)
6).Ginger : 1 Inch (Grated)
7).Green Chillies : 2-3 ( Chopped)
8).Methi Dana : 1 Teaspoon
9).Saunth Powder / Dry Ginger Powder : 1 Teaspoon
10).Saunf Powder : 1 Tablespoon                               
11).Red Chilly Dry : 2 
12).Curry Leaves : 10-15
13).Red Chilly Powder
14).Turmeric Powder
15). Hing
16). Salt to Taste
17). Oil




For Pakode :

1). Besan
2). Onion Chopped
3). Green Chillies Chopped
4). Potato Chopped in Cubes
5). Red Chilly Powder
6). Turmeric Powder
7). Hing
8). Cumin
9).Salt to Taste
10). Oil to fry pakodas




Procedure :

1). Take Oil in wok , Mix the Ingredients for pakoda in a big bowl. 



2). Fry the pakodas as usual but a little less crisp.


3). Keep them aside on a absorbent paper.


4). Now , Reduce the quantity of oil in the same wok/kadhai (PLEASE BE CAREFUL , OIL WOULD BE REALLY HOT AFTER FRYING PAKODE) Only reason for using the same wok and oil is the time and already hot oil and wok.

5). Take approx 2-3 tablespoons of Oil , add Methi dana at first. Once it has turned to dark brown , add Red Chilly Dry and Curry Leaves.

6). After the raw fragrance goes of , add chopped garlic and grated ginger.


7). Saute for a min or 2 and add onion , again saute.


8). Now till the onion getting transparent in the wok , Mix Curd+Water / Buttermilk and all the other dry ingredients ( Besan , saunth , saunf powder ,salt etc ). Use a Raee (See in image) to mix things properly.


9). Till this time your onion is turned golden in colour.

10). Now , Carefully add the buttermilk mixture in the wok slowly.



11). Let the kadhi boil on high flame till the consistency is turning thicker in a few minutes.

12). After say about 10-15 minutes , turn the flame to medium and let it boil for another 5 mins , now you add the pakodas in it.

13). Let it boil , covered on low flame till you see oil droplets on the kadhi.

14). Your Kadhi is ready to eat with fresh and hot chawal. Trust me , this combo rocks. No doubt you can even have kadhi chapati , but kadhi chawal is the best combo.


Variations :
1. You can add finely chopped Spinach after onion turns transparent , saute for a few minutes , then add buttermilk mixture in it. It is palak wali kadhi :)

2. You can add Small Cubes of potatoes or cauliflower , saute for a minutes , before adding buttermilk mixture. It can called as Aloo / Gobhi wali kadhi.

3. Similarly , try and add peas , beans , boiled black chana or a bunch of mix veggies , chopped in small cubes , after adding onion. Saute for a few minutes and then add buttermilk mixture. Enjoy :)
